It's THE fun way to navigate!
These nautical activities use inflatable craft. The interest is being able get through the passages when the water level is high. In fact, these boats "twist" far more than rigid hulls and forgive balance errors... In short, in the case of beginners, with a classic canoe or kayak and such high water levels, you spend most of your time swimming, whilst with inflatables, you stay in the boat!!
